Ingredients (Serves 2–3):

Flattened rice (Poha) – 1 cup (thin variety)

Spinach leaves – 1 cup (washed and finely chopped)

Onion – 1 medium English Simple Recipes (finely chopped)

Green chili & ginger paste – 1 tsp

Cumin seeds – ½ tsp

Red chili powder – ½ tsp

Turmeric powder – ¼ tsp

Salt – to taste

Rice flour – 2 tbsp (for binding)

Fresh coriander – 2 tbsp (finely chopped)

Oil – for deep frying

Soak Poha:
Rinse poha in water and let it soak for 5–7 minutes until soft. Drain excess water if needed. -
Prepare the mixture:
In a large bowl, mix soaked poha, chopped spinach, onion, ginger-green Hindi Simple Recipes chili paste, cumin, red chili powder, turmeric, salt, coriander, and rice flour. -
Mix well:
Combine all ingredients to form a soft dough-like mixture. Add just a sprinkle of water if needed. -
Shape the vade:
Grease your palms with a little oil and shape small round flat fritters (like patties). -
Fry:
Heat oil in a pan. Fry the vade on medium flame until golden and crispy on both sides. -
Serve:
