Material :-
- 1 kg cauliflower
- 500 grams of carrots
- 100 grams
- came
- 100 gm dry red chillies (less hot)
- 1 sprig of mint
- 25 grams of cinnamon
- 20 grams of pepper
- 20 grams cloves (a little less will do)
- 5 cups of vinegar
- 250 grams jaggery
- 250 grams of oil
- 250 grams of salt
- 50 grams of garlic.
Action :-
- Clean and finely chop the cauliflower. Discard the leaves and the midrib. Or use English Simple Recipes in soup. Thin and thin slices of carrots about an inch long.
- Spread the washed vegetables on a thin plate and let them dry. Chop mint leaves. Grate ginger and peel garlic.
- Finely grind ginger-garlic-mint with red chillies and add little vinegar. Grind the cloves, cinnamon and pepper into fine powder.
- Add the remaining vinegar to the jaggery and cook it thick and keep it aside. Mix the vegetable pieces, chopped masala, crushed powder and salt English Simple Recipes together. Pour into a wide mouth jar.
- Pour cooled jaggery paste on it and stir well. The jar should be kept in the sun for 7-8 days by tying a four-layer dadra. Move every morning.
It should be brought indoors in the evening. There is no problem in using the pickle after a week. But the jar should be kept in a dry place.
