Ingredients:
- 1 cup gram flour (besan)
- 1/2 cup semolina (sooji/rava)
- 1/4 cup yogurt (dahi)
- 1/2 teaspoon cumin seeds (jeera)
- 1/2 teaspoon turmeric powder (haldi)
- 1/2 teaspoon red chili powder (lal mirch)
- 1/2 teaspoon English Simple Recipes baking soda
- Salt to taste
- Water, as needed
- Oil or ghee for cooking
Optional toppings:
- Chopped onions, tomatoes, and green chilies
- Chopped coriander leaves
- Grated cheese
Instructions:
- In a mixing bowl, combine gram flour, semolina, yogurt, cumin seeds, turmeric powder, red chili powder, baking soda, and salt.
- Gradually add water to the mixture and whisk well to make a smooth batter. The consistency should be similar to that of regular English Simple Recipes pancake batter.
- Let the batter rest for about 15-20 minutes. This allows the semolina to absorb moisture and results in softer pancakes.
- After resting, check the batter consistency. If it has thickened, you can add a little more water and mix well.
- Heat a non-stick pan or griddle over medium heat. Drizzle some oil or ghee on the pan and spread it evenly.
- Pour a ladleful of the batter onto the pan and spread it gently to form a round pancake. You can make them thick or thin according to your preference.
- Cook the pancake on medium heat until the edges turn golden brown and the surface starts to dry out. Drizzle some oil or ghee around the edges.
- Flip the pancake and cook the other side until it is cooked through and turns golden brown.
- Remove the pancake from the pan and repeat the process with the remaining batter.
- Serve the gram flour and semolina pancakes hot with your choice of chutney, yogurt, or toppings like chopped onions, tomatoes, green chilies, coriander leaves, or grated cheese.
