Ingredients:

- 1 cup sago (sabudana)

- 2 medium-sized potatoes, peeled and cubed

- 2 tablespoons oil

- 1 teaspoon cumin seeds

- 2 green chilies, finely chopped (adjust according to your taste)

- 1/2 cup roasted peanuts, coarsely ground

- 1/2 teaspoon turmeric powder

- Salt to taste

- Juice of 1 lemon

- Fresh coriander leaves, chopped (for garnish)

Instructions:

1. Rinse the sago pearls under running water until the water runs clear. Soak the rinsed sago in enough water to

cover it completely. Let it soak for about 4-5 hours or overnight.

2. After soaking, the sago pearls will become soft and translucent. Drain the excess water using a strainer and set aside.

3. Heat oil or ghee in a pan or kadai over medium heat. Add the cumin seeds and let them splutter.

4. Add the chopped green chilies and sauté for a minute.

5. Add the cubed potatoes and cook until they are golden brown and cooked through.

6. Add the ground peanuts, turmeric powder, and salt. Mix well.

7. Reduce the heat to low and add the drained sago pearls. Mix everything together gently, ensuring that the sago pearls are evenly coated with the spices.

8. Cover the pan with a lid and let it cook for about 5-7 minutes, stirring occasionally to prevent sticking.

9. Turn off the heat and squeeze the lemon juice over the khichdi. Mix well.

10. Garnish with chopped coriander leaves.

11. Serve the Sago Bhagar Potato Chaklya hot as a breakfast dish or as a snack.
