Stuffed Okra and Onion Curry English Simple Recipes

Ingredients:

  • 250 grams okra (bhindi)
  • 2 medium-sized onions (pyaz)
  • 2 tablespoons oil
  • 1/2 teaspoon turmeric powder (haldi)
  • 1 teaspoon coriander powder (dhaniya)
  • 1/2 teaspoon red chili powder (lal mirch)
  • 1/2 teaspoon garam masala
  • Fresh coriander leaves English Simple Recipes for garnish
  • Salt to taste



Instructions:

  • Start by washing the okra and patting it dry. Then slit each okra lengthwise, making sure not to cut through completely, and keep them aside.
  • In a small bowl, mix together turmeric powder, coriander powder, red chili powder, garam masala, and salt.
  • Finely chop one onion and keep it aside. Take the other onion and slice it into thin rings.
  • Stuff the spice mixture into the slit okra, filling each one evenly.
  • Heat oil in a pan or kadai over medium heat. Add the chopped onion and sauté until it becomes translucent.
  • Add the stuffed okra to the pan English Simple Recipes and gently mix them with the onions. Cover the pan and let it cook for about 10-12 minutes, stirring occasionally to ensure even cooking.
  • Once the okra is tender and cooked through, remove the lid and cook for an additional 2-3 minutes to remove any excess moisture.
  • Garnish with fresh coriander leaves and the sliced onion rings.
  • Serve the stuffed okra and onion curry hot with roti or rice.
