Sure! Here's a recipe for a vegetarian version of Pad Thai:

Ingredients:

- 8 ounces rice noodles

- 2 tablespoons vegetable oil

- 2 cloves garlic, minced

- 1 cup tofu, diced

- 1 cup carrots, julienned

- 1 cup bell peppers, sliced

- 1 cup bean sprouts

- 2 green onions, chopped

- 1/4 cup chopped peanuts

- Lime wedges, for serving

For the sauce:

- 3 tablespoons soy sauce

- 2 tablespoons tamarind paste

- 2 tablespoons brown sugar

- 1 tablespoon rice vinegar

Instructions:

1. Cook the rice noodles according to the package instructions. Drain and set aside.

2. In a small bowl, whisk together the soy sauce, tamarind paste, brown sugar, rice vinegar, and sriracha sauce to make the sauce. Set aside.

3. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic English Simple Recipes and sauté for about 1 minute until fragrant.
