Ingredients:

  • 1 cup (2 sticks) unsalted English Simple Recipes butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups corn flour (cornmeal)
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, cream together English Simple Recipes the softened butter and sugar until light and fluffy. You can use a hand mixer or a stand mixer for this step.
  • Add the vanilla extract to the butter-sugar mixture and mix until well combined.
  • In a separate bowl, whisk together the corn flour, all-purpose flour, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough might be crumbly, but it should hold together when pressed.
  • Take about a tablespoon of dough and roll it into a ball. Place the dough balls on the prepared baking sheet, leaving some space between each cookie.
  • Flatten each dough ball slightly using your palm or the bottom of a glass. You can also press the top with a fork to create a pattern.
  • Bake the cookies in the preheated oven for 12-15 minutes or until the edges are lightly golden.

  1. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
