Gowari Chutney is a traditional Indian condiment made with lentils and spices. It's typically served as an accompaniment to various South Indian dishes like dosa, idli, and vada. Here's a simple and delicious Gowari Chutney recipe:

Ingredients:

- 1 cup split Bengal gram (chana dal)

- 2-3 dried red chiliesEnglish Simple Recipes(adjust to your spice preference)

- 1/4 cup grated coconut (fresh or frozen)

- 1 small onion, chopped

- 3-4 garlic cloves

- 1 small piece of tamarind (about 1/2 inch)

- 1/2 teaspoon mustard seeds

- A pinch of asafoetida (hing)

- 1 tablespoon vegetable oil

- Salt to taste

- Water as needed

Instructions:

1. Rinse the chana dal thoroughly under running water. Then, soak it in water for about 30 minutes. This will help in easier grinding.

2. In a pan, heat 1 tablespoon of oil over medium heat. Add the soaked chana dal and dried red chilies. Roast them until the chana dal turns golden brown and gives off a nice aroma. Stir frequently to avoid burning. Remove from heat and let it cool.

3. In the same pan, add theEnglish Simple Recipeschopped onion and garlic cloves. Saute until the onion turns translucent. Remove from heat and let them cool.

4. In a grinder or blender, add the roasted chana dal and red chilies, sautéed onion and garlic, grated coconut, tamarind, and salt.

5. Grind everything into a smooth paste. If the mixture is too thick and hard to grind, you can add a little water (1-2 tablespoons) at a time until you achieve a smooth consistency.

6. Transfer the chutney to a bowl.

7. In a small pan, heat a little oil. Add mustard seeds and let them splutter. Add a pinch of asafoetida (hing) and stir for a few seconds.

8. Pour the seasoning over the chutney and mix well.

Your Gowari Chutney is now ready to be served with dosa, idli, vada, or any other South Indian dish of your choice. Enjoy the burst of flavors!
