Paneer Pasanda is a delicious North Indian dish where paneer (Indian cottage cheese) is stuffed with a rich and creamy filling, then shallow-fried and served with a creamy gravy. Here's a basic recipe for Paneer Pasanda:

Ingredients:

For Paneer:

- 250 grams paneer (cut into thick slices)

- 1/4 cup cashew nuts (roughly chopped)

- 1/4 cup raisins

- 1/4 cup grated paneer (for stuffing)

- Salt to taste

- 1/2 teaspoon red chili powder

- 1/2 teaspoon garam masala powder

- 1/4 teaspoon turmeric powder

- 1 tablespoon oil

For Gravy:

- 1 cup onion (finely chopped)

- 1 cup tomato (finely chopped)

- 1 tablespoon ginger-garlic paste

- 1/4 cup cashew nuts (soaked in warm water)

- 1/4 cup fresh cream

- 1/2 teaspoon red chili powder

- 1/2 teaspoon garam masala powder

- 1/4 teaspoon turmeric powder

- 1/2 teaspoon coriander powder

- 1/2 teaspoon cumin powder

- Salt to taste

- 2 tablespoons oil

- Fresh coriander leaves (for garnish)

Instructions:

For Paneer:

1. Take the paneer slices and make a slit in the middle of each slice. Be careful not to cut them all the way through.

2. In a bowl, mix grated paneer, chopped cashew nuts, raisins, salt, red chili powder, garam masala powder, and turmeric powder.

4. Heat oil in a pan over medium heat. Shallow fry the stuffed paneer slices until they turn golden brown on both sides. Keep them aside.

For Gravy:

2. Add ginger-garlic paste and sauté for another couple of minutes until the raw smell goes away.

3. Add chopped tomatoes and cook until they turn mushy.

5. Let the mixture cool down a bit, then blend it into a smooth paste using a blender.

6. Heat the same pan again and add the blended paste. Cook for a couple of minutes.

8. Add fresh cream and mix until well combined. Cook for a few more minutes until the gravy thickens slightly.

 Assembling Paneer Pasanda:

1. Arrange the shallow-fried paneer slices in a serving dish.

2. Pour the prepared gravy over the paneer slices.

3. Garnish with fresh coriander leaves.

4. Serve hot with naan, roti, or rice.
