English Simple Recipes

Ingredients:

  • 1 cup dried beans English Simple Recipes (such as kidney beans, black beans, or chickpeas), soaked overnight and drained
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 can (14.5 oz) diced tomatoes (or 2-3 fresh tomatoes, chopped)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala (optional)
  • Salt to taste
  • 2 cups water or vegetable broth
  • Fresh cilantro, chopped Hindi Simple Recipes (for garnish)

Instructions:

  1. Cook Beans: In a large pot, cook the soaked beans in fresh water for about 45-60 minutes, or until tender. Drain and set aside.

  2. Prepare Curry Base: Heat oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.

  3. Add Aromatics: Stir in garlic and ginger and cook for another 1-2 minutes until fragrant.

  4. Add Spices: Add ground cumin, coriander, turmeric, and salt. Cook for another 1 minute.

  5. Add Tomatoes: Add diced tomatoes and cook until the tomatoes break down and the oil starts to separate from the mixture.

  6. Combine Beans: Add the cooked beans to the pan. Stir well to combine.

  7. Simmer: Pour in water or broth, bring to a boil, then reduce heat and simmer for 15-20 minutes, allowing the flavors to meld. If using garam masala, stir it in at this stage.

  8. Garnish: Garnish with fresh cilantro and serve with rice or bread.

2. Spicy Beans Curry

Ingredients:

  • 1 cup beans Marathi Simple Recipes (such as black beans or kidney beans), soaked overnight and drained
  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 green chili, chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon amchur (dry mango powder) or lemon juice
  • Salt to taste
  • 2 cups water or vegetable broth
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Cook Beans: Cook the soaked beans in a pot of water for about 45-60 minutes until tender. Drain and set aside.

  2. Prepare Curry Base: Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.

  3. Add Onion: Add chopped onion and cook until golden brown.

  4. Add Tomatoes & Spices: Add tomatoes, green chili, turmeric, red chili powder, paprika, and ground coriander. Cook until the tomatoes soften and the oil separates from the mixture.

  5. Combine Beans: Add the cooked beans to the pan and mix well.

  6. Simmer: Pour in water or broth, bring to a boil, then reduce heat and simmer for 15-20 minutes. Stir in amchur or lemon juice.

  7. Garnish: Garnish with fresh cilantro and serve with rice or naan.

3. Coconut Beans Curry

Ingredients:

  • 1 cup beans (like chickpeas or black beans), soaked overnight and drained
  • 1 tablespoon coconut oil or any vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 cup grated coconut or 1 can (14 oz) coconut milk
  • 1 tomato, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 cups water or vegetable broth
  • Fresh cilantro, chopped (for garnish)

Instructions:
