Ingredients:
- 1 cup dried beans English Simple Recipes (such as kidney beans, black beans, or chickpeas), soaked overnight and drained
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, minced
- 1 can (14.5 oz) diced tomatoes (or 2-3 fresh tomatoes, chopped)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala (optional)
- Salt to taste
- 2 cups water or vegetable broth
- Fresh cilantro, chopped Hindi Simple Recipes (for garnish)
Instructions:
Cook Beans: In a large pot, cook the soaked beans in fresh water for about 45-60 minutes, or until tender. Drain and set aside.
Prepare Curry Base: Heat oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.
Add Aromatics: Stir in garlic and ginger and cook for another 1-2 minutes until fragrant.
Add Spices: Add ground cumin, coriander, turmeric, and salt. Cook for another 1 minute.
Add Tomatoes: Add diced tomatoes and cook until the tomatoes break down and the oil starts to separate from the mixture.
Combine Beans: Add the cooked beans to the pan. Stir well to combine.
Simmer: Pour in water or broth, bring to a boil, then reduce heat and simmer for 15-20 minutes, allowing the flavors to meld. If using garam masala, stir it in at this stage.
Garnish: Garnish with fresh cilantro and serve with rice or bread.
2. Spicy Beans Curry
Ingredients:
- 1 cup beans Marathi Simple Recipes (such as black beans or kidney beans), soaked overnight and drained
- 1 tablespoon oil
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 green chili, chopped (adjust to taste)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon amchur (dry mango powder) or lemon juice
- Salt to taste
- 2 cups water or vegetable broth
- Fresh cilantro, chopped (for garnish)

Ingredients:

- 1 onion, finely chopped

- 1 tablespoon ginger, minced
- 1 cup grated coconut or 1 can (14 oz) coconut milk
- 1 tomato, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 cups water or vegetable broth
- Fresh cilantro, chopped (for garnish)
