Ingredients:
For Misal:
- 1 cup sprouted moth beans (matki)
- 1 onion, finely chopped
- 1 tomato, chopped
- 2-3 green chilies, slit
- 1-inch piece ginger, grated
- 2-3 cloves English Simple Recipes garlic, minced
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt, to taste
- 2 tablespoons oil
- 2 cups water
- Fresh coriander leaves, chopped (for garnish)
- Lemon wedges (for serving)
For Pav:
- 4-6 pav (Indian bread rolls)
- Butter, for toasting
Instructions:
1. Prepare the Misal:
- Heat Oil: In a Hindi Simple Recipes pan, heat oil over medium heat.
- Sauté Onions: Add chopped onions and sauté until golden brown.
- Add Ginger and Garlic: Stir in grated ginger and minced garlic. Cook for a minute.
- Add Tomatoes and Spices: Add chopped tomatoes, green chilies, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
- Add Sprouts: Stir in the sprouted moth beans and mix well.
- Add Water: Pour in water and bring to a boil. Reduce heat and let it simmer for about 15-20 minutes, until the beans are cooked and the mixture thickens.
- Finish with Garam Masala: Stir in garam masala and cook for another 2 minutes. Adjust salt if needed.
2. Prepare the Pav:
- Toast the Pav: In a Marathi Simple Recipe sseparate pan, melt some butter and toast the pav until golden brown on both sides.
3. Serve:
- Garnish Misal: Serve the misal hot, garnished with fresh coriander leaves.
- Accompaniments: Serve with toasted pav and lemon wedges on the side.
