Ingredients
- 1 cup Basmati rice
- 2 cups water
- 1/2 cup mixed vegetables English Simple Recipes (carrots, peas, beans)
- 1/4 cup dried fruits (cashews, raisins, almonds)
- 1 onion (sliced)
- 2-3 green cardamoms
- 1-2 cloves
- 1-2 bay leaves
- 1 stick cinnamon
- 1/2 teaspoon ginger paste
- Salt to taste
- 2 tablespoons ghee or oil
- Saffron strands (optional)
- Fresh coriander leaves (for garnish)
Instructions
Prepare the Rice:
- Rinse the basmati Hindi Simple Recipes rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.
Heat Ghee/Oil:
- In a pan, heat ghee or oil over medium heat. Add the sliced onions and sauté until they turn golden brown.
Add Whole Spices:
- Add cardamoms, cloves, bay leaves, and cinnamon stick. Sauté for a minute until fragrant.
Add Vegetables:
- Stir in the mixed vegetables and cook for 2-3 minutes.
Add Rice:
- Add the soaked and Marathi Simple Recipes drained rice to the pan. Gently stir to mix everything.
Add Water and Cook:
- Pour in 2 cups of water and add ginger paste and salt. Bring it to a boil, then reduce the heat to low, cover, and let it cook for about 15-20 minutes, or until the rice is cooked and water is absorbed.
Add Dried Fruits:
- In the last 5 minutes of cooking, sprinkle in the dried fruits and saffron strands (if using). Mix gently.
Fluff and Serve:
- Once done, fluff the pulao with a fork. Garnish with fresh coriander leaves.
