Ingredients:

  • 1 cup green moong English Simple Recipes beans (split and soaked for 3-4 hours)
  • 1 tablespoon oil (vegetable or mustard oil)
  • 1 medium onion (finely chopped)
  • 1 tomato (finely chopped)
  • 1 teaspoon ginger-garlic paste
  • 1-2 green chilies (slit or chopped)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala (optional)
  • Salt to taste
  • Fresh coriander leaves (for garnishing)
  • Water (as needed)

Instructions:

  1. Soak the Moong Beans:

    • Soak the green Hindi Simple Recipes moong beans for 3-4 hours or overnight in enough water. Drain the water before cooking.
  2. Heat Oil:

    • In a pan or kadhai, heat 1 tablespoon of oil over medium heat.
  3. Add Aromatics:

    • Add finely chopped onions and sauté until golden brown.
    • Add ginger-garlic paste and chopped green chilies. Sauté for another 1-2 minutes until fragrant.
  4. Cook Tomatoes:

    • Add turmeric powder, cumin powder, coriander powder, and salt. Stir well to combine the spices with the tomatoes.
  5. Add Moong Beans:

  6. Add Water and Simmer:

    • Pour in enough water to cover the beans (about 2 cups or more, depending on desired consistency).
    • Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes or until the beans are cooked and tender. Add more water if needed to adjust the consistency.
  7. Final Touch:

    • Once the moong beans are cooked and the gravy thickens, add garam masala (optional) and give it a good stir.
    • Garnish with fresh coriander leaves.
  8. Serve:

    • Serve the Green Moong Sabzi hot with roti, chapati, or rice.
