English Simple Recipes

Ingredients:

  • 4 medium-sized potatoes, peeled and cubed
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 green chilies, slit (optional)
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon curry powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon cinnamon powder (optional)
  • 1/2 cup coconut milk
  • 1 cup water (or vegetable broth)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 1 tablespoon lemon juice (optional)

Instructions:

  1. Heat the oil in a large pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter for a few seconds.

  2. Add the chopped onion, garlic, and ginger. Sauté until the onions turn soft and golden.English Simple Recipes

  3. Add the green chilies (if using) and cook for another minute.

  4. Now, add the turmeric powder, ground coriander, curry powder, red chili powder, and cinnamon powder. Stir well to coat the onions and spices.

  5. Add the cubed potatoes and mix them well with the spices. Cook for 3-4 minutes, stirring occasionally.

  6. Pour in the water (or vegetable broth) and bring it to a boil. Reduce the heat and simmer for about 15-20 minutes or until the potatoes are tender.Hindi Simple Recipes

  7. Once the potatoes are cooked, stir in the coconut milk and cook for another 5-7 minutes until the curry thickens slightly.
