Ingredients:
- Mutton (bone-in pieces) – 500 grams
- Onions (finely sliced) – 2 large
- Tomatoes (finely chopped) – 2 medium
- Yogurt (whisked) – 1/2 cup
- Ginger-garlic paste – 1 tablespoon
- Green chili (slit) – 2
- Cashew nuts (ground to paste) – 2 tablespoons
- Coconut (grated) – 1/4 cup (optional)
- Ghee or oil – 3 tablespoons
- Cinnamon stick – 1-inch piece
- Cloves – 2
- Cardamom pods – 2
- Bay leaves – 2
- Turmeric powder – 1/2 teaspoon
- Red chili powder – 1 teaspoon
- Coriander powder – 1 tablespoon
- Garam masala – 1 teaspoon
- Salt – to taste
- Water – 2 cups
- Fresh coriander leaves (chopped) – for garnish
Instructions:
Prepare the Mutton:

Fry the Onions:

- Add the chopped tomatoes and cook until they soften and oil starts to separate from the masala mixture (about 5-6 minutes).
Add Mutton and Yogurt:

- Add 1/2 cup of whisked yogurt and mix it into the masala. Cook for 5 minutes, stirring occasionally.
Add Cashew and Coconut Paste (optional):

Add Water and Simmer:
- Pour in 2 cups of water and bring to a boil. Reduce the heat and cover. Let it simmer for about 45-60 minutes until the mutton becomes tender and the flavors have blended.
Garam Masala and Garnish:
- Once the mutton is cooked, add 1 teaspoon of garam masala and mix well.
- Garnish with chopped coriander leaves.
Serve:

Tips:
- If you prefer a richer gravy, you can add some cream towards the end of cooking.
- Adjust the consistency of the gravy by adding more or less water based on your preference.
