Aloo Dosa is a popular South Indian dish made with crispy dosa filled with a English Simple Recipes spiced potato filling. Here's a simple recipe to make this delicious dish at home:
Ingredients:
For Dosa Batter:

1 cup rice

1/4 cup urad dal (split black gram)

1/2 tsp fenugreek seeds (optional)

2 large potatoes (boiled and mashed)

1 onion (finely chopped)

1-2 green chilies (finely chopped)

1/2 tsp mustard seeds

1/2 tsp cumin seeds

1/4 tsp turmeric powder
-
1/2 tsp ginger (grated or chopped)
-
1/4 cup chopped coriander leaves

Salt to taste

1 tbsp oil
Instructions:
Step 1: Prepare the Dosa Batter

Soak the rice and dal: In a bowl, soak the rice and urad dal with fenugreek seeds Hindi Simple Recipes (if using) for about 4-6 hours or overnight.

Grind the batter: Drain the soaked rice and dal. Grind them together in a blender or wet grinder with some water to make a smooth batter. The consistency should be slightly thick, but pourable.

Ferment the batter: Transfer the batter into a large bowl, cover it, and let it ferment for 8-12 hours (depending on the weather). Once fermented, it should become slightly bubbly and rise.
Step 2: Prepare the Aloo Filling

Heat oil: In a pan, heat 1 tablespoon of oil over medium heat.

Add spices: Add mustard seeds and cumin seeds. Let them splutter.

Add onions and chilies: Add chopped onions and green chilies. Sauté until the onions become soft.

Add potatoes: Add the boiled and mashed potatoes to the pan. Mix everything together. Season with salt and cook for 2-3 minutes. Finally, stir in the chopped coriander leaves. Set aside the filling.

Heat a pan or griddle: Preheat a non-stick tawa or griddle on medium heat.

Spread the batter: Lightly grease the tawa with a few drops of oil. Pour a ladle of dosa batter onto the center of the tawa and spread it in a circular motion to form a thin dosa.

Cook the dosa: Let the dosa cook for 2-3 minutes until the edges become crispy and golden brown. Drizzle a little oil around the edges if needed.

Add the filling: Once the dosa is cooked and crispy, add a portion of the aloo filling in the center. Fold the dosa over the filling and serve hot.
Serving:
