Ingredients:
For the Potato Filling:

Potatoes – 3 medium English Simple Recipes (boiled and mashed)

Green chilies – 2 (finely chopped)

Ginger – 1 inch (grated)
-
Garlic – 3-4 cloves (grated or minced)
-
Mustard seeds – ½ teaspoon
-
Curry leaves – 6-8
-
Turmeric powder – ¼ teaspoon
-
Salt – to taste
-
Lemon juice – 1 teaspoon (optional)

Oil – 1 tablespoon
For the Batter:
-
Gram flour (besan) – 1 cup
-
Turmeric powder – ¼ teaspoon
-
Red chili powder – ½ teaspoon
-
Carom seeds (ajwain) – ¼ teaspoon (optional)
-
Salt – to taste
-
Baking soda – a pinch (optional)
-
Water – as needed (to make a thick batter)
For Frying:
-
Oil – enough for deep frying
👩🍳 Instructions:
1. Prepare the Potato Filling:

Heat 1 tbsp oil in a pan. Add mustard seeds and let them splutter.

Add curry leaves, green chilies, ginger, and garlic. Sauté for 30 seconds.

Add turmeric and Hindi Simple Recipes mashed potatoes. Mix well and add salt to taste.

Add lemon juice if using. Cook for 1–2 minutes, then turn off the heat and let it cool.

Shape into small balls (golf ball size).
2. Make the Batter:

In a mixing bowl, combine gram flour, turmeric, red chili powder, carom seeds, salt, and baking soda.

Gradually add water to make a thick, lump-free batter.
3. Fry the Vadas:

Heat oil in a deep pan over medium heat.

Dip each potato ball into the batter, coat it well, and gently drop it into the hot oil.
