Moong Usal – Simple Maharashtrian Recipe

📝 Ingredients (for 2 servings):

  • Sprouted green gram (whole moong) – 1 cup

  • Oil – 1 to 2 tbsp

  • Mustard seeds – ½ tsp

  • Cumin seeds – ½ tsp

  • Asafoetida (hing) – a pinch

  • Turmeric powder – ¼ tsp

  • Green chilies – 2 (chopped)

  • Ginger-garlic paste – 1 tsp

  • Onion – 1 medium English Simple Recipes (finely chopped)

  • Tomato – 1 (optional)

  • Salt – to taste

  • Jaggery (optional) – ½ tsp

  • Fresh coriander leaves – for garnish

  • Grated coconut – (optional for garnish)

  • Lemon juice – few drops for extra flavor


👩‍🍳 Instructions:

  1. Sprouting the Moong:
    Soak whole moong overnight. Drain water and tie them in a clean cloth for 8–10 hours to allow sprouting.

  2. Tempering:
    Heat oil in a pan. Add mustard seeds. Once they splutter, add cumin seeds and asafoetida.

  3. Add spices:
    Add green 
    Hindi Simple Recipes chilies, ginger-garlic paste, and turmeric powder. Sauté until aromatic.

  4. Add onion:
    Add chopped onion and cook until it turns golden brown.
    (Optional: Add chopped tomato here and cook until soft.)

  5. Cook sprouts:
    Add sprouted moong, salt, and jaggery. Mix well.

  6. Add water:
    Add ¼ to ½ cup water (as needed) and cover the pan. Let it simmer for 5–7 minutes or until moong is cooked but not mushy.

  7. Finish:
    Garnish with chopped 
    Marathi Simple Recipes coriander, grated coconut, and a dash of lemon juice.


🍽️ Serving Suggestions:

  • Serve hot with chapati, bhakri, or steamed rice.

  • Can also be enjoyed as a light dinner or lunch bowl with salad on the side.
